Firecrackers

Holidays are wonderful.  I love when Trey is off of work and we can spend the day together as a family.  Yesterday, was the 4th of July.  We slept late (7:23 AM) and leisurely headed to the country club pool.  In the past, I was always anti country club pool because having two little kids plus a pool is a lot of work.  Now that Ford can swim without any flotation device, and Bitty loves the baby pool, I am all about going to the club.

We got there as soon as they opened at 10:00 for chair security.  I had to make sure that I would have a lounge chair to lie in while the boys played.  Better safe than sorry!!!  My friend, Meg, and her son, Gaines, came to play.  Gaines brought good toys and Ford acted like a brat at one point for not wanting to share, so he got stuck in time out.

 The pool lady had organized water games complete with prizes.  Somehow John Brantley managed to get a shovel, pail, and bubbles and he didn't even compete.  Ford did the penny dive (see his blue and white booty in the air) and won a pool noodle and water squirter.
 After 5 ½ hours of pool fun we left to shower and then headed to Puddin and Pops’s house.  They were cooking ribs and all the fixings and homemade ice cream.  Homemade ice cream takes a while, as you know.  Ford wanted to watch it spin.

We ended the night back at the country club for fireworks and more fun.  The boys went to bed after 10:00 which always makes for an interesting night!

 Today we went by the new cupcake place in town, “Cuppy Cakes” and the boys got a treat!  Boy do we love some icing.
 Mr. No-Nap... Bad Mood Lamar (he’s stayed up too late lately) was forced to do some worksheets this afternoon.  Sheets aren't his favorite activity.
So, on my last blog I told y’all I was cooking an apple crisp/crunch…whatever you want to call it.  Trey and I actually made two.  They were both delicious.  I’m going to put the two recipes below.

Puddin’s Apple Crisp

6 tart apples
1 cup sugar
¼ tsp. ground cloves
½ tsp. cinnamon
2 tsp. lemon juice
¾ cup all purpose flour
1/8 tsp. salt
6 T butter

Peel apples, mix spices.  Put butter in the bottom of a casserole dish (not the 6T of butter).  Pour apples on top of butter.   Sprinkle spices and lemon juice on top.  Mix flour and salt and pour on top.  Drizzle butter on top.  Bake at 350 for 45 min.

Gran’s Apple Crisp

1 can sliced apples (if using fresh I would at least use 2 cups)
2/3 cup sugar
½ box yellow cake mix
1 stick butter
½ cup chopped pecans (opinion)

Empty apples into a buttered 8 or 9 inch square baking dish.  Sprinkle sugar over apples.  Sprinkle cake mix evenly over apples.  Melt butter and pour over cake mix.  Sprinkle pecans over butter.  Bake at 350 for 45-60 minutes
